Ingredients:
1-1/2 cups unbleached wheat flour
1/2 cup bran
1/2 cup sugar
1/2 cup chopped dates
1 cup peeled and shredded apple (pack firmly in cup)
1 Tablespoon baking powder
3 large very ripe bananas (approximately 1-1/2 cups)
1 egg (or egg substitute equivalent)
1/2 cup low-fat milk
Instructions
Preheat oven to 350 degrees. Coat a muffin tin with butter-flavored olive oil cooking spray. Mix all ingredients except egg and milk in a large bowl.  Lightly beat egg. Gradually add milk while continuing to beat the egg. Add the rest of the ingredients. Blend well. Fill muffin tins two-thirds full. Bake 20-25 minutes or until a wooden pick inserted in center of muffin tin comes out clean.
