Pineapple Noodle Pudding

Ingredients:
8-ounce package wide egg noodles, cooked according to package directions
2 cups low-fat cottage cheese
1 cup reduced fat sour cream
8-ounce can crushed pineapple (undrained)
1/2 cup raisins
2 tablespoons light butter
1/2 cup sugar (or sugar blend)
1 egg
2 egg whites
1 teaspoon vanilla extract
Instructions
Preheat oven to 350. Coat a 2 to 3 quart casserole with butter-flavored olive oil cooking spray. Place the first five ingredients in a large bowl. Place the rest of the ingredients in a food processor or blender. Process until smooth. Pour over the noodle mixture. Stir to combine. Pour into the prepared casserole. Bake one hour. Makes 10 servings.
