Let’s talk chicken! An obvious staple in our weight training diet, and by far one of the most important, chicken can be boring. It can be bland and yes, at times, it may make you wanna just —-! That’s why I’m here. Now I can come up with thousands of different ways to make chicken, having grown up in an Italian household— however, there weren’t many weeks that passed where mom didn’t make a sausage, pepper and onion type dish. Whether it was a sandwich or by itself, I loved it! It inspired me to create my Chicken With Potatoes, Peppers and Onions!

Chicken With Potatoes, Peppers and Onions

Chicken With Potatoes, Peppers and OnionsIngredients

1/2 bell pepper (sliced)
1/2 green bell pepper (sliced)
1/2 medium onion (sliced)
2 pinches of sea salt
2 pinches of black pepper
1 Tbsp of extra-virgin olive oil
1 small can of tomato paste
1/4 cup of chicken broth
10 ounces of chicken breast
8 ounces of baking potatoes
2 leaves of fresh basil

Directions

On medium heat, preheat the extra-virgin olive oil in a sauté pan. After one minute, add chicken breast. Cook for two minutes on each side, and then remove. Add the potatoes and stir often for five minutes or so. Add the peppers and onions. Stir. After two minutes, add the tomato paste, salt, black pepper, basil and chicken stock. Cover for another six or seven minutes or so. Add the chicken breast back into the sauté pan, and cover. Cook for another three minutes or so. The dish should be complete!
